So I’ve been M.I.A for a while doing a little experiment. I cut out gluten and went completely vegan for a month (animal product free, dairy free, egg free) and introduced foods back into my diet. I have rheumatoid arthritis and some digestive issues so I’ve been trying to control it better through diet. I’ve discovered that I feel a lot better eating diary free/ gluten free. I’m introducing meat and eggs back into my diet but antibiotic free, hormone free, grass fed items that are better for your immune system. I might try goats milk & goats cheese. We’ll see it’s an ongoing learning process.

So this is a collection of some of the meals I had throughout the month that are vegan/gluten free. Enjoy.

Grocery List

So I thought I’d post my grocery list for those of you who are wondering. Just a quick note about fat free/light/diet foods. When you’re choosing a food with one of those words on the label be wary. In most cases the food has increased sugar/sweetener or sodium values to compensate for the lack of fat, which we most certainly do not want to consume. The best things are whole foods or foods with very few ingredients that you can pronounce.

So I became the queen of popsicles while sick trying to pump in the nutrients because popsicles and soup aren’t actually meals. My poor throat. Cherry protein smoothies = DELCIOUS! Crispy edamame with garlic and cheese A+. If you guys ever want to know what’s in these meals feel free to msg me! :)

The albacore tuna on green beans and baby spinach was so fresh. Mixed a full can of tuna with cottage cheese, 1tbsp. light olive oil mayo, dill & juice from 1/4 of a lemon!

This is a general recipe for how I make my overnight oats! You could top with any of your favorite fruits/nut butters. :) 
Coconut overnight oats 1/3 c. rolled oats  1/3 c. greek yogurt  2 tbsp. chia seeds  2 tbsp. unsweetened coconut 1/3-1/2 c. almond milk  1-2 tbsp. agave nectar Mix and put in the fridge overnight. Add almond milk in the morning to your liking. Topped with PB2, honey almond Kashi, 1/2 banana

My grocery haul this week from Natures Emporium. Trying out hemp protein, it definitely gives a different texture to shakes but in yogurt/cottage cheese/oatmeal it’s actually really nice.
